From what I understand, MCCP is a compression protocol. That should mean that (if your client supports it) less information needs to sent between your computer and the mud. Everything should look the same, but it may be a little faster connection and the mud may consume less bandwidth.
MXP seems to be an actual extension to the way you can communicate with the mud. It apparently uses hypertext tags rather like HTML to format text (size, color, font, etc.) and will allow links in the text, etc. One of the threads mentioned click-able exits, so I'm assuming that if you have "showexits" on:
Exits: East South West
Those directions are actually clickable and your character will move in the direction you click. Also, they mentioned mouse-overs, so the mud can show different information if you hover the mouse over specific text.
It might be helpful if players using MXP could post screenshots.
