When soloing a mob that's biggern' me (which is nearly all of them), I'll order pets to tank, then shift knowing that once the mob refocuses on me it will cause a pet or two to disengage. One way around that is to wait for the mob to refocus on you, re-order pets, then shift (using battleshift and more mana). It's not as clean, meaning I actually have to get in the fight and tank, but it works.
Druid pets can be ordered during a fight, but I haven't used them to any great degree. Maybe a druid prime could shed some light on how to make the most out of them.
